I love oats! They are rich in soluble fiber, calcium, potassium and protein. I enjoy my oats with bananas, berries or any other kind of fruit, but sometimes I like them savory! Give this recipe a try for either breakfast, lunch or dinner. You can use whatever veggies you have in your kitchen. I like using the frozen pepper and onion blend from Trader Joe's because it gives the dish a nice kick!
1 cup Rolled Oats dry
1 cup organic strained tomatoes (I use Bionaturae from Whole Foods)
1/3 cup rinsed low sodium black beans
1/2 cup frozen fire roasted corn (From Trader Joe's or Whole Foods)
3/4 cup Trader Joe's frozen fire roasted bell peppers and onions (Or saute fresh peppers and onion prior)
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic
1 tsp chili powder
Chopped purple cabbage
Sriracha or hot sauce
1. Pour your oats in a sauce pan and add the strained tomatoes. Next, fill the pot with water until the oats are completely covered. Bring to a boil. Then, reduce heat and cover.
2. Once boiling, throw in your peppers/onions, corn and black beans. Cover the pan.
3. Add your spices and continue stirring.
3. Once the oats are cooked, and everything is blended together, pour into a bowl and throw on the lettuce, cabbage, salsa and Sriracha or hot sauce if you like it with a kick!
