Japanese Sweet Potato Sushi Recipe

Ingredients:

Baked Japanese sweet potato

Cucumber

Alfalfa sprouts

Purple cabbage

Raw broccoli slaw

Shredded carrots

Pickled Sushi Ginger

 

Instructions:

1. Take the skin off of your sweet potato and heat it in the microwave.

2. Chop all of your veggies.

3. spread your heated sweet potato on the nori wrap and place your veggies on top. Then roll and slice. 

NOTE: 1 large potato makes about 2-3 rolls
