Hands down, Japanese sweet potatoes are my favorite food. I could eat them plain, wrapped in lettuce or stuffed with my bean and veggie mixture! This is perfect for breakfast, lunch or dinner. I recommend that you cook a bunch of potatoes at the beginning of the week, so you can quickly put this meal together without having to wait for your potatoes to bake. This recipe has very little ingredients and takes just a few minutes!
1 cooked potato (whichever kind you prefer)
1 cup kidney beans
1 cup of kale
1/2 cup Trader Joe’s frozen fire roasted corn
1/2 cup Trader Joe’s frozen onion and pepper blend
1 tsp. cumin
1/2 tsp. smoked paprika
In a pan, add a tbsp. of water and your frozen veggies. Open your beans and rinse with water. Then, add your beans, kale and spices to the pan. Cook until everything is well combined. Plate your potato and add the mixture inside the potato. Pair with steamed kale or any other vegtable/green of your choice!
