I love chili, especially on a cold winter night. But, when I'm super busy and don't have time to cook an entire pot of chili in my rice cooker, I use this recipe instead! It literally takes a few minutes. You just need a couple of key ingredients to really speed up the proccess.
-1 package of Trader Joe's organic frozen quinoa
-1 cup low sodium organic kidney beans
-Bunch of kale
-Handful of mushrooms
-1.5 cups organic low sodium roasted tomatoes
-1 tsp. cumin
-1 tsp. smoked paprika
-Dash of garlic powder
-Dash of onion powder
-Nutritional Yeast flakes
1. Empty the Trader Joe's frozen quinoa into a bowl and microwave for 3 minutes. Meanwhile, open your can of beasn and rinse.
2. In a pan, add 1 t tbsp. of water, the kale and mushrooms. Cook until the veggies are brown
3. Add in the defrosted quinoa, tomatoes, beans and spices.
4. Plate, sprinkle Nutritional Yeast flakes and enjoy!
