This dish is perfect for a cozy Sunday morning. I like to make a huge batch of this and eat it throughout the week. Super easy to make and great for those on-the-go meals!
Mini red, yellow and orange peppers
1 package of firm tofu
Handful of Kale
1 tsp. Cumin
1 tsp. paprika
Hot Sauce and/or Salsa
Pre-cook or cook 1 cup of quinoa
In a pan, add a Tbsp. of water. Next, add chopped veggies. Add tofu and mash with a potato masher.
Add spices and cook until ingredients are browned.
Plate the quinoa and veggie/tofu mixture. Top with green onion, Nutritional Yeast and hot sauce/salsa!
