Mushroom and Bean Risotto

This delicious, dairy free, simple risotto will have you feeling satisfied, and will keep your waist small! Pair with a light salad any time of day.



1 Cup Brown Rice (dry)

1 Cauliflower

1 Tsp. basil

1 Tsp. Oregano

1.5 cup low sodium black beans

2 cups kale

2 cups chopped mushrooms




Cook brown rice in rice cooker or on stove-top


Cut cauliflower and steam in pot. Once steamed, dump in a food processor or Vitamix blender. Add spices. Once blended to a creamy consistency, set aside.


In a pan, add 1 Tbsp. of water. Next, add kale and mushrooms and cook until tender. Add black beans.


Once cooked, in a bowl, add rice, veggie and bean mixture and blended cauliflower.


Mix together and enjoy!
